Georgia Blueberry Orange Loaf

Ingredients:
  • 3 eggs
  • 3 cups self-rising flour
  • 1 tablespoon grated orange rind
  • 3/4 cup sugar
  • 2/3 cup orange juice
  • 1 cup Georgia blueberries
  • 1/2 cup milk
  • 1/2 cup chopped pecans
  • 1/2 cup butter flavored shortening, melted
  • Dash of cinnamon
Directions:Combine eggs, orange rind, orange juice, milk and butter; beat on medium speed of electric mixer for 30 seconds.  Combine flour and sugar in a large bowl; make a well in center of mixture.  Add egg mixture, stirring just until moistened.  Fold in Georgia blueberries, pecans and cinnamon.  Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan.  Bake at 350 degrees F for 1 hour or until wooden pick inserted in center comes out clean.  Cool in pan 10 minutes and remove.
