Georgia Blueberry Lemonade

  • 1 1/2 cups fresh Georgia blueberries
  • 1 1/3 cups sugar, divided
  • 1/4 vanilla bean
  • 1 cup fresh lemon juice (about 7 lemons)
  • 1/2 cup loosely packed fresh mint leaves

1. Place blueberries in a large pitcher, and sprinkle with 1/3 cup sugar.

2. Bring remaining 1 cup sugar and 1 cup water to a boil in a small saucepan. Split vanilla bean, scrape seeds into pan, and add bean. Bring to a boil, and boil, stirring occasionally, 3 to 5 minutes or until sugar is dissolved. Remove from heat, cover, and steep 20 minutes.

3. Remove and discard vanilla bean from syrup, and pour syrup over blueberries in pitcher. Add lemon juice and 1 1/2 qt. water. Stir well, being carefully not to crush berries. Cover and chill 1 hour before serving. Stir in mint just before serving.
