Georgia Blueberry Delight

Crust

Ingredients:
  • 2 cups plain flour
  • 2 sticks margarine, melted
  • 1 1/2 cups chopped pecans
Directions:  Combine ingredients until crumbly.  Press into a 9 x 12-inch dish.  Bake 350 degrees F for 20 minutes or until slightly brown.  Cool.

Cream Cheese Filling

Ingredients:
  • 2 cups sugar
  • 2 (8 oz.) packages low-fat cream cheese, softened
  • 1 teaspoon vanilla
  • 1 (16 oz.) carton prepared whipped topping
Directions:  Cream sugar, cream cheese and vanilla until light.  Fold in prepared whipped topping and spread on top of crust.  Top with Georgia blueberry topping.

Georgia Blueberry Topping

Ingredients:
  • 1 quart of Georgia blueberries
  • 1 cup sugar
  • 1 cup water
  • 3 tablespoons corn starch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
Directions:  Combine ingredients and cook and stir over medium heat until thick.  Cool before spreading over cream cheese filling.  Chill.
